Like the Raclette de Compton (plain), the peppercorn version is made using only the certified organic milk from the family’s herd of Holstein cows. A coppery-coloured washed rind surrounds the semi-firm golden paste with its line of pink peppercorns running through the center of the cheese. The aroma of apples and butter is enhanced by the pink peppercorns when heated.
Traditionally, Raclette cheese was warmed close to a fire or on a special heating plate (also called a raclette) and the melting cheese was scraped onto a plate. In fact, the word “raclette” comes from the French “racler”, meaning “scrape”.
We recommend 150-200 grams of cheese per person.
