French Morbier style cheese featuring beautiful vegetable ash marbling through the center of each wheel of cheese. Traditionally made on alpine farmsteads in the winter months when cows were producing less milk, the line of ash was used as a barrier over the morning cheese curd before more cheese was made in the evening. Creekside makes Alpine Ash year round but the line of ash pays homage to the pioneers of this style of cheese. Fruity, mild, and approachable, this cheese is delicious when used for raclette.
