This is a soft, surface ripened cheese, shaped in a traditional log shape with long pieces of supportive straw running the length of the exterior, thin, bloomy, white rind. It is what you commonly see in France called Chevre Buche.
The interior paste is white and firm towards the center but runnier at the rind. Mildly aromatic, the flavour, slightly tangy, lactic and goaty with subtle hints of hazelnut, becomes more pronounced with age. Pairs with crisp Sauvignon Blanc, Riesling, Verdicchio, light fruity red or rosé.
