Haloumi Kebabs
Ingredients
- 1 package of Haloumi cheese, cut into 1" cubes
- Selection of vegetables cut into pieces suitable for threading on skewers (button mushrooms, bell peppers, cherry tomatoes, zucchini, eggplant
- 1/4 cup of olive oil mixed with 1 clove minced garlic and 1/2 teaspoon each of salt and pepper and 1 tablespooon chopped fresh basil
- 4 pita breads
- 1 head of lettuce - shredded
- 2-3 tomatoes - diced
Directions
- Marinade cheese and vegetables in oil mixture for 15 minutes.
- Thread vegetable pieces and cheese cubes alternately onto wooden skewers.
- Grill or BBQ kebabs, turning once, until vegetables are just cooked and cheese is beginning to turn golden at edges.
- Serve with pita breads filled with lettuce, tomato
