Haloumi Kebabs

Ingredients

  • 1 package of Haloumi cheese, cut into 1" cubes
  • Selection of vegetables cut into pieces suitable for threading on skewers (button mushrooms, bell peppers, cherry tomatoes, zucchini, eggplant
  • 1/4 cup of olive oil mixed with 1 clove minced garlic and 1/2 teaspoon each of salt and pepper and 1 tablespooon chopped fresh basil
  • 4 pita breads
  • 1 head of lettuce - shredded
  • 2-3 tomatoes - diced

Directions

  1. Marinade cheese and vegetables in oil mixture for 15 minutes.
  2. Thread vegetable pieces and cheese cubes alternately onto wooden skewers.
  3. Grill or BBQ kebabs, turning once, until vegetables are just cooked and cheese is beginning to turn golden at edges.
  4. Serve with pita breads filled with lettuce, tomato
