Fleur de Sel, known in Portugal as Flor de Sal, is hand-harvested, in the Algarve region of Portugal. During the harvest process, the first layer produces the finest and most mineral-rich crystals, to ultimately be used, not during the cooking process, but to season dishes prior to serving. Flor de Sal is used to greatest effect with simple dishes and foods that will accentuate its unique sweet and creamy flavour. In days gone by, Portuguese salt workers referred to Flor de Sal as "salt cream," as it was (and is still) collected from the salt pan (salina) surface as cream is from the milk).

Where Flor de Sal is skimmed daily from the top of the salt pan, Sal Marinho Tradicional (traditional sea salt) consists of the second hand-harvested batch of salt that remains after the majority of the sea water has evaporated from the salt pan. Sal Marinho Tradicional is commonly used in the cooking process, due to its more coarse nature, but still retains the mineral rich flavors of Flor de Sal.

The
Delouis family began as a vinegar company in Limoges, France in the late
19th century. In 1976, they began making mustards in Champsac and with
great success began to make fresh mayonnaises, dressings, and sauces.
Their Bearnaise and Hollandaise recipes have been
perfected from authentic recipes and adapted to the market without
shortchanging the customer of their great gastronomic qualities:
smoothness, rich in taste and so close to the real thing. They are made

The FATTORIA PETROLO is located in the zone of the Colli Aretini that circle around the Monti del Chianti, an area delimited in 1716 by the grand duke of Tuscany and historically known for its particularly valuable viticulture and olive production.

growing land, with a total of 4500 plants in Frantoio, Leccino and
Moraiolo varieties, includes

groves are exposed in the east and
northeast, and the land in which they are planted is marly and stony.
The cultivation regarding the entire production of olives is organic,
