Portuguese Sea Salt - Nov 19/07

Fleur de Sel, known in Portugal as Flor de Sal, is hand-harvested, in the Algarve region of Portugal. During the harvest process, the first layer produces the finest and most mineral-rich crystals, to ultimately be used, not during the cooking process, but to season dishes prior to serving. Flor de Sal is used to greatest effect with simple dishes and foods that will accentuate its unique sweet and creamy flavour. In days gone by, Portuguese salt workers referred to Flor de Sal as "salt cream," as it was (and is still) collected from the salt pan (salina) surface as cream is from the milk).

Where Flor de Sal is skimmed daily from the top of the salt pan, Sal Marinho Tradicional (traditional sea salt) consists of the second hand-harvested batch of salt that remains after the majority of the sea water has evaporated from the salt pan. Sal Marinho Tradicional is commonly used in the cooking process, due to its more coarse nature, but still retains the mineral rich flavors of Flor de Sal.

Their Bearnaise and Hollandaise recipes have been perfected from authentic recipes and adapted to the market without shortchanging the customer of their great gastronomic qualities: smoothness, rich in taste and so close to the real thing. Campo Corto olive oil has a highly distinctive, intense and vibrant taste that does not, however, obscure other flavors.

It truly embodies the best of Tuscany in every drop.  Olio Laudemio is made with 70% Frantoio olives and 30% Moraiolo olives and is filtered with cotton.

Petrolo - 2006 Harvest -  Organic

From the same wine producer who The Wine Spectator's James Suckling calls "The Le Pin of Tuscany". 

Made popular by Jamie Oliver during a holiday in Tuscany, Petrolo is an uncertified "organic" oil from a single estate in the Chianti hills between Florence and Siena.

The FATTORIA PETROLO is located in the zone of the Colli Aretini that circle around the Monti del Chianti, an area delimited in 1716 by the grand duke of Tuscany and historically known for its particularly valuable viticulture and olive production.

The olive growing land, with a total of 4500 plants in Frantoio, Leccino and Moraiolo varieties, includes 16 ha of old terracing using the vaso cespugliato cultivation method and 2 ha of a new system dating back to 1986, which is irrigated and uses the monocono cultivation method.

The olive groves are exposed in the east and northeast, and the land in which they are planted is marly and stony.
The cultivation regarding the entire production of olives is organic, and the farm adheres to the control body Suolo e Salute.

The harvest is carried out by hand in November.  The harvested olives are put in perforated and well-ventilated boxes and are milled daily in the olive mill with the “continuous” system. With this procedure the oil is extracted by centrifugation.

The Fattoria Petrolo produces two types of extra virgin olive oil: Petrolo and Laudemio Torre di Galatrona.

Olio Petrolo is made from olives belonging to the Frantoio-Leccino-Moraiolo varieties and is bottled without filtering.

The total acidity of the oils produced has never surpassed 0.2% in oleic acid.  It has a clean and distinctive taste with a touch of artichokes and hints of pepper
